Inspired by head chef, Vince Williams, the restaurant features a comprehensive menu combining fresh seasonal produce with a Welsh twist. Dishes change regularly to make the most of local availability. Wherever possible, we use produce from our own herb and salad garden to ensure maximum freshness. Vince is passionate about his work and says "I seem to have a natural ability to understand how foods will work together, how the tastes will blend and how to turn simplicity into elegance."
Examples of the kind of dishes available on the evening menu are lightly spiced crusted monkfish with braised fennel and a cucumber lime vinaigrette or Moroccan spiced rump of lamb with artichoke and asparagus salad with mint yogurt.
